Sweet Sixteen

This weekend we were given the opportunity to cater a very special customer's sixteenth birthday party. We were given X amount of dollars to make whatever we want. Here's what the LRBC came up with:Tiered Voodoo Doughnut Birthday Cake
Summer-into-Fall Fruit Salad
Oven Roasted Vegetable Platter
Mac 'n' Cheese
Mini-Meatloaf Sandwiches (with Vegetarian counterparts)
and Chocolate Dipped Strawberries

I love your blog and am very much interested in your cafe. If only I wasn't on the other side of the country! Your pictures have made me salivate more than once. I have been considering opening a cafe for several months. However, I don't have the culinary background you possess, I don't have the amount of people you did to start the ball rolling and I don't think I have enough money (or confidence). I was wondering if you could give me your opinions on an upstart cafe considering you have just done this. Is there anything you regret? Is there something you wished you planned differently for? Is it everything you'd hoped it would be? Thank you for your time and the great blog.

To answer your questions Chris:
1) I can't say there is much we regret, just many, uh, learning experiences along the way. All we can do, is try to do our very best.
2) It was hard to "plan" for anything, given that this was our very first time trying to open a cafe.
3) Yes. Again, it was hard to know what to expect, but thus far it has been a great ride.
