Elusive...until today?

Not food related at all, but I am so damn excited that Ali and I just saw the bird you see pictured above, that I just had to write about it here. Funny thing is, when we were traveling through Guatemala two years ago, we were constantly keeping our eyes focused upwards, in hope that we might catch a glimpse of the 'elusive' Quetzal. Now flash forward two years later, and we're again sitting outside, staring up into a forest canopy. No sooner do I finish telling Ali that I had earlier today read that the Quetzal lives in rotted our tree trunks, when the magnificent happened: Up in the trees, 30ft away from where we sat, fluttered what we believe was the bird in question. Awestruck, we stepped closer to get an even better look, only to frighten it away. The whole encounter lasted less than 30 seconds, but we're near certain that it had to be the real thing.

I love it! Congrats on your Mexican Bigfoot equivalent sighting! I am missing my Paperboy w/veg bacon something fierce! Enjoy you two!
