for those busy mornings when you're on-the-go
When I get up early to go to work I usually don't make breakfast for myself before I leave the house. It seems that no matter what time I get out of bed, my appetite wakes up at least an hour or so after I do. On days when I know that I'll be spending most of my time working in the kitchen, I tend to opt for a healthy breakfast of fresh fruit, yogurt, and granola. However, more often than not I miss breakfast entirely, and I wind up eating that first meal around mid afternoon. By that time I am usually so hungry that my body doesn't even know it is hungry until that first bite of food touches my lips. On days like these, nothing satisfies like an egg sandwich.
I suppose that it's both a blessing and a curse that I still enjoy eating the food we prepare at the LRBC. With most jobs that I have had involving food I usually tire of the fare I work with in the first few months. Not so with our food. I tell many of our customers, with the utmost sincerity, that I ate an egg sandwich nearly every day for the first five months the cafe was open. Stopping my habit only because of the growing concern that I developed for my body, and what might be happening to it as a result of my eating habits. The Vegan BLT quickly became my "anti-egg sandwich," and for nearly a month I didn't eat a single egg sandwich. But life is short, and with moderation in mind I decided to fall off the wagon. I no longer keep myself from enjoying the occasional egg sandwich breakfast, and I have managed to incorporate other foods into my breakfast diet.
As for this morning...an egg sandwich it simply had to be. Ali and I got up at 6:00am so that we could work the early morning shift at the cafe, preparing baked goods and doing various prep for the day. After cooking for nearly four hours it was time to go home and take our little dog for a short walk. Also, it was time for my breakfast, and nothing, I mean nothing works to satisfy both brevity and hunger like an egg sandwich. Thus, figuring out what to eat for breakfast this morning was more like a reflex than a decision.
What's for breakfast:
Zoobomb w/ avocado- fried egg with jack cheese, caramelized onion, pasilla aioli, and avocado
12oz cup of French press Courier Coffee
